Different King Shrimp Sizes
Our selection of shrimp offers different species, origins, sizes and degrees of preparation. Wild shrimp or farmed shrimp, find in the blink of an eye all of our offers in order to make the right choice.
The general rule: The larger the calibre number, the smaller the shrimp.
The way the king shrimp size is expressed varies according to the processing of the shrimp:
- Whole shrimp: by the box or by the kilo
- Semi-shelled or shelled shrimp: per pound (lbs), i.e. 454 g.
Please note, a 20/30 shrimp per 800 g can is smaller than a 20/30 shrimp per kilo, for example.
Intensive and semi-intensive: mass production of small and medium-sized shrimp in small environments. Extensive: production of shrimp of medium and large sizes and reared in natural environments respecting the environment (mangrove type). It is a commercial term designating whole size shrimp (> 30/40 pieces per kg)
The different species:
Pandalus borealis: Wild species from cold seas. It takes 7 years to reach the same size as a tropical shrimp raised between 3 and 4 months. Fine and tasty flesh due to its slow growth in cold waters. We like to eat it cold as a buffet or on seafood platters
Penaeus spp. : The tropical shrimp is caught by bottom trawling or in large-scale intensive farming. Penaeus species have certain advantages for shrimp farming: they reproduce quickly and have many young. They are therefore generally not very sensitive to fishing.
Penaeus vannamei: Most consumed livestock species in the world. Cooked, its shell turns pink and its flesh is white tinged with pink. We like it particularly cooked in a pan or on a plancha.
Pleoticus muelleri: Wild species native to the cold waters of Argentina, it has a slightly salty taste and is red when raw. Tender, with white flesh speckled with red, we recommend light cooking due to its fine shell.
Penaeus monodon: Farmed or wild species, also called tropical Black Tiger shrimp. It has a firm and crunchy texture, a white flesh and a shell with black stripes, after cooking, its colour is orange-pink. Delicately iodized, these generally large prawns, can benefit from the name prawns.
